Regulation lags behind emerging science, often by decades. In the hypersensitive realm of food safety, sterility persists as the dominant paradigm. However, science now focuses on the health-promoting function of robust microbiomes, in human bodies and in the soil that grows our food. Soils that are amended with bulk organic materials, and are low in soluble nitrogen, are proven to be less hospitable to human pathogens. Recent evidence also suggests that biodiversity of all kinds on vegetable farms may enhance food safety. In this workshop you will learn which organic practices maximize biodiversity, and how these can safeguard your harvest for customers. We will also explore how to better communicate these benefits to food safety inspectors and regulators.
