Edible insects are all the rage, for good reasons and bad. This interest is only likely to get hotter. When insects are raised correctly, they can be a beneficial addition to food and farming. They don’t take much space to raise. Most likely, they will be raised in an organic way. They are high in protein and good for you. And they taste good when prepared well. We’ll hear about the successes and challenges of raising insects from an insect farmer and from a producer who works with insects to make a variety of interesting foods.
